Defieciency of the Lactase Enzyme - newborns get Lactose from milk and first needs to convert it into glucose and galactose using the enzyme lactase. After weaning, the amount of lactase goes down to 10% and many people can keep this level up through adulthood but most people lose it and become lactose intolerant - almost all Asians and Africans and many Europeans. These people can drink fermented milk because bacteria does the job of the lactase. People who can drink milk in adulthood may be at an advantage in higher latitudes when there is less vitamin D which is necessary for calcium absorption, people can drink milk to compensate. But Africans don’t need this because there is plenty of vitamin D to go around |
